Beth, a teaching professor in environmental studies at Washington University in St. Louis, is excited to join the board of City Greens and support equitable access to healthy food. Beth’s teaching typically address issues at the intersection of science, engineering, law, and policy and she hopes her students see and understand how who they are as individual and what they are learning has relevance and meaning in the world outside of the classroom. Not surprisingly food production, access and justice often comes up in her courses and is a significant interest for her students. Beth is a long-time member of Three-Rivers Community Farm and enjoys reading, running and cooking. She lives in University City with her husband, two dogs and two college age kids.
